Does paying a deposit mean that you accept a school's offer of admission? In other words, can I pay a deposit and "reserve" a spot, while I wait to hear back from other schools?

That's exactly what a deposit is for; for 'reserving' a spot. You can back out later on if you want. But, be prepared to lose all or most of your deposit money.

Thanks for the reply! I understand that I would lose the money, but I it's worth it keep my options open. I'm on a waitl list for one particular school and am hoping that they will come through...

Just remember, you have to pick ONE school by May 1st. You can't hold spots at multiple schools beyond that date. Before that, reserve as many spots as you want, but be considerate towards other applicants as well. Many of them are probably waiting for their first interview.🙂

Will do. I'm planing on reserving a spot at only one school, while I wait for others...I suppose people are doing the same at the school I'm wait listed for. haha.
