So I have. 3.2gpa, 3.0 science gpa, 502 mcat, high upward trend postbacc (already included in gpa calculation, 3.7 postbacc), Mexican, really unique personal story about being a caregiver. Already interviewed at a DO school. I also applied to Netter and UC riverside based on my own unique personal story and reinvention. What are my chances at either of those schools? Honestly Netter would be a dream
UC Riverside should be doable IF you're from the Inland Empire.

Netter is a service loving school.

Only three schools???

No, I applied to the following:
Uc riverside
Phoenix (rejected after secondary)
Tucson (rejected after secondary)
Lecom (Erie, seton hill, Elmira)
Netter
CHSU-COM
Davis (silent rejection)
ACOM (post secondary hold)
Incarnate word (post secondary hold)
Louisiana State (rejected, but applied because of their emphasis on the last credits)
Ponce
Kaiser (for kicks and giggles)
Marian
Fort worth COM
St George (accepted for January 2020)

I tried to go for schools this round where I best fit the mission despite the stats not being as high as everyone else’s. I honestly was surprised with my interview at LECOM and didn’t expect to get any interview invites so I didn’t apply as broadly (now kicking myself for it)
I’m from Orange County, not inland empire 🙁 but good service background helping underserved, Spanish speaking populations. I literally applied to Netter because I thought I fit there and I got a secondary so even that surprised me
LSU was also a donation.
Kaiser was a good choice, being from CA.

How many hours in the post-bac classwork?
I'm surprised that you're not getting more love from the DO world. Western, TUNCOM and PacNW should have been on the list.
The low MCAT may be holding you back, or you have a bad LOR.

IF you don't have any DO shadowing, get some. If you don't have a DO LOR, get one.

I suggest that an SMP given at a school with linkage might be in order.
