Do Med schools like Pharmacy Shadowing and count it as experience...?

Why not?

What if one person shadows both professions and finally decides to enter medicine? He can tell medical school that he wants to enter medicine because he shadowed both professions and likes medicine better.

then it's the physician shadowing that counts, not the pharmacist shadowing.

In my experience, anything that goes in the application should be solely medicine related. Admissions people/interviewers often only take a cursory look at the application and when there are non-medical things like that, it can be a red flag. It may make perfect sense to you as to why you would include it (and you could probably explain it in an interview) but an adcom who's only taking a brief look at your app may decide you don't know what you want to do. Thus you may not make it to the interview to explain it.
