Let's say you worked for about half a year for minimum wage at a popular national store like walgreens, walmart, or CVS pharmacy. Would D school admissions call them up and try to speak to your boss/manager about you? I didnt give them the store's phone number or address but I did give them my manager's name and her name is very unique so itll be easy to get more information.

I know they dont do this for volunteer/shadowing type extracurriculars but what about paid work in well-known national stores?

Full disclosure (tldr): I didnt do anything bad, if you asked my manager about me now she would say Im a model employee with no complaints from customers. I even had multiple customers ask to see the manager just so they could tell her how much they liked me and how extra helpful I was. (I banter/joke a lot with customers, never complain and help them quickly.)
School is starting and I genuinely forgot to give my 2 week notice and was considering whether to abruptly quit or to give a 2 week notice and work for that time and consequently not being able to attend some/many classes, possibly missing some important things about what the classes require to do well. If I quit abruptly it will piss off my manager and she'll probably end up really disliking me in spite of her liking me a lot previously.

No.
Way too time-consuming for admissions to do this

I had the exact same scenario with my workplace this past summer except it was to study for my DAT. I was a little nervous earlier in the cycle but figured they wouldn't contact employers

Seems like the consensus is they will not contact my employer. In that case I'll just call my manager and say I quit. If I do it in person she'll play up being a tragic victim and lecture and guilt-trip me into changing my mind, and she'll probably succeed because Im a sucker for sob stories and dislike seeing people suffer. How do I know manager will do this? Once called in sick 2 hours before work and after 20 min of listening to her talk on the phone I ended up coming in to work sick as a dog. Over the phone I can say I quit and just hang up 30 seconds afterwards once I know it registered in her mind and before she violates my ears and mind with all her negative chatter.
