Has anyone taken the DAT more than once? If so, how does the scoring work? If you do lower on some sections the second time, so they keep your old score ?

I'm not fully understanding what you are exactly asking.
It's not up to you whether to keep the score or not. It's just there with you in your record.
I've taken twice and I did way better the second time around.

Total Science = you can't really calculate this on your own since 40 questions are from bio and 30 from each OC and GC. I scored 23 BIO 26GC 25OC and my TS came out to be 24

AA = (RC + OC + GC + BIO + QR)/5
PAT = is not part of your AA

The question basically means what happens if you do well on the DAT the second time around NOT how the exam is scored.

Im not too knowledgeable about this as well, but I believe depending on the school, they will take the higher score for each section between the two test scores.
Some might just take the exam with the higher AA/TS. Not 100% positive though

Depends on the school. Some look at most recent, some look at highest, some look at all
