Even if it is, it's not really remarkable enough to put down on an application.

Depends on OPs motivations, time commitment, and what he/she can get out of it to talk about on apps and in interviews. It's hardly any less remarkable than a lot of other volunteering, and potentially unique.
 
If you are giving hours to an entity for something not directly profited by you, it would count as volunteer work. Ignore anyone who says your activity is not "worth it." It sounds very unique, beneficial to improving your verbal skills, and a worthy activity. Just make sure you can relate and tie that activity in to all your other components of the application, especially at the interviews.

Yeah. Take back what I said upon further examination. It's a productive volunteer activity.
 
Motivations: My proofreading of pages helps to digitize books in the public domain, allowing for the widespread distribution of many classic works of literature to people who may not have access to them otherwise.

Time commitment: I plan for several hours a week.

What I can talk about: I love reading and I am fortunate to have access to libraries. Other people are not as fortunate and are limited in their access to books . These people with limited access, whether it be because they don't have local libraries or they don't have the resources to purchase books, should not be penalized by their situations. This website in conjunction with Project Gutenberg delivers thousands of free books to people, encouraging literacy and a love of reading.
