Doing MPH/MS in food nutrition during residency

Good morning everyone, I am an IMG with following credentials, matched at University-affiliated community program
Scores: 247, 251, cs pass, 228
Visa: H1B

I know the importance of doing a chief year and doing the best in residency as a way of getting into gastroenterology.
Besides that, I was looking at online MPH programs and I was wondering even if I don't match into GI at the first attempt, maybe MPH nutrition will help me get into nutrition fellowship later, which I can use as a stepping stone to get into GI? Is MPH degree compensated when you look for jobs later? Or maybe MS in nutrition?
How competitive are nutrition, IBD or other non-accredited fellowship for someone who needs H1B visa?
How can I do research if my program is not remotely research focused at all?

Please let me know your thoughts or opinions. I will really appreciate the input from seniors

H1B makes it hard to match to GI and almost impossible to do IBD with no GI fellowship

so what do you think of MPH programs?
so you think working as aademic hospitalist is the only option?
or doing research after residency?
 
working as a hospitalist and researching on weeks off
