I would think that being from a disadvantaged economic background would help your friend, especially if they talk about it in their PS as challenges they overcame, etc. If you were looking at two people with the same stats: one from a rich family who went to private school etc, one who was poor and who worked to support their family and yet they both made the same grades... which one would be more impressive?
I don't know if a Spanish grandparent qualifies you as Spanish unless you were born in Spain. I would go with whatever you identify yourself as.. so if you really do think of yourself as Spanish/Hispanic, put that, otherwise I would be honest and not put it. I'm not sure about any other verification methods though. If nothing else, maybe they check in the interview so random people don't put themselves as black to get an edge.
i don't think its much of an "impressive" thing although, sure, people like stories about overcoming adversity and such, but i think its more along the lines of who's gonna see the poor one day, cuz i'm not
