Other than volunteer work, shadowing and some type of clinical exposure what is considered to be "great" EC's? 😎

Working, shadowing, and volunteering are good enough. More importantly, it's how long you spent doing each of them not how many ECs you have, imo.

My clinical experience involved working in a hospital setting for almost 3 years and volunteering for about a year.

Something different. A lot of interviewers seemed interested in my heavy involvement with music and martial arts. They seemed to be pleased to meet someone with a broad variety of interests. Just don't spread yourself out too much.
