Should I do every single problem in EK 1001 or should I do the odd numbers. I did BR for Gen Chem and Physics and EK for Bio and Organic...I feel like I need more practice. will I have time to do all the EK 1001 with 2 months before my test or should I do some maybe about half of each book.

EK 1001 is primarily for content weakness, so assess your mistakes and if they are mostly due to content deficiencies, I would do as much as needed. There is no set amount that you should do. The 1001 series are great at hammering in important concepts though. Be sure to thoroughly understand your mistakes in 1001; since there are so many problems, you may tend to glance over them(which is what I did too) but I found that really understanding your thought process at a rudimentary level(remember 1001 is content review not critical thinking MCAT style questions) will help you a lot especially in TBR/TPR/EK passages. Good luck!

But SN2's guide says 1/3 I think... so that's a good starting point.

Try starting with every third problem. Then, if your post-passage (i.e. when you take actual practice passages, such as, BR passages) review shows a particular content weakness, use the associated EK 1001 questions you have left to help reinforce your content knowledge after you review the topic.
