Finished undergrad in May and starting my gap year.

I just finished taking a class in phlebotomy and I am now certified.
Also, I just received job as a scribe.

I paid money for the phlebotomy class and phlebotomists make more money. However, I feel like the scribe position would offer a better overall experience.

Anyone have experience with these jobs? Suggestions?

Don't quote me on this, but I think the point is to get experience working with patients, and that all low-level hospital jobs are basically graded the same in medical school admissions. With this in mind, if I were you, I would do phlebotomy to make a bit more money, especially since those jobs don't pay much.

Are they both full-time? Or could you 20 hrs/wk scribe and 20 phlebotomy? I think both are good experiences for different reasons. Scribing gives you a front row view of what it's like to be a doctor, phlebotomy gives you first hand experiences dealing with and directly interacting with patients.
