I'm completely lost in the material I need to begin preparing myself for the MCAT. People have been recommending so many different prep companies' book sets and I'm kinda just overwhelmed with all the material I need. I was honestly thinking about just using Kaplan's 7 Book Set and then get my hands on as many practice exams. What else do I need?

In terms of content review, every company's books will prepare you adequately. Some might be more suited to your study style than others and some might be longer than others but they'll all prepare you adequately. I used Kaplan and I was fine. The real distinguishing factor here is practice, practice, practice. The most important materials are obviously AAMC Section Bank, FLs, and QPacks. In that order. Next comes Khan Academy practice passages for B/BC and P/S. These are unrivaled (except for the AAMC materials, of course). And then basically all test prep companies' FLs are ****. Use them to gauge your content knowledge and for getting a feel for the format of the exam. Always take FLs under simulated testing conditions.
