Does being Persian or Middle Eastern count as being "Other Asian" for the AMCAS applicatoin or should I just put white? Would there be any benefit to put Other Asian since it "may add to the diversity of the school."

What are my fellow Persians putting down as their ethnicity/race?

If you think being asian adds diversity to any U.S. MD school (not sure about DO), you're gravely mistaken. Asians are overrepresented in medicine and therefore being white or asian is about the same thing as far as being an applicant is concerned.
 
Isn't Iran (Persia) near the region known as Caucasia? 🙄
