Whatever I enjoyed or found fulfilling... it's different for every person. Check what your school offers that interests you, and go for that.

Precisely. Try to find a list or database of what clubs and groups are active at your school, and scan it for the coolest things you see. I can't help you much further, because what I find cool may well not be the same as what you find cool. 😛

I'd try to stay away from typical clubs where its pretty much a bunch of undergrads hanging out.

Try to do something unique that shows maturity and something that can build your character.
