In response to thank you notes, some interviewers state something like "if there's anything i can do to help, please let me know." Is it expected that I reach out to them? What kinds of things would I ask for help with?

Well, whatever you do, don't write to ask for help directing your grandfather's $5 million donation to the right office at the med school. :oops:

It just seems like a nice sign off on a letter and not an offer you should take anyone up on.

Yeah, that just sounds like a courtesy sign-off to be polite. We have policies to prevent others from doing anything untoward on your behalf. It's you and your application for the most part.
