4/4 taker here. Honestly it's hard for me to differentiate between any of the exams. I did the worst on AAMC 11 in part because of dumb mistakes and in part because it unfortunately targeted most of my weaknesses, but I never came out of any of the tests feeling "omg that was disproportionately harder than any of the other 7 tests." People have different strengths and weaknesses. I know people have said that the real tests this year were much harder than aamc 10 and 11 but I really did not feel that way. The biggest thing is getting a handle of your nerves, because when your heart is pounding out of your chest on the real thing, simple things seem more difficult than they actually are. Overall I think the mcat is fair in difficulty and I think if you treat each practice test like the real think you will score very close to your average if you control that initial panic of "WTH" am I reading. Then again, we will see when scores actually come out...
