Hi-

Planning to apply for fomal one-year post-baccs (Bryn Mawr, Scripps, Goucher, UVA, etc.) this fall/spring, but do not have EC work to-date. I have a 3.7 UG GPA in humanities from a top 25 university and have worked full time in non-health since graduation.

Should I hold off on apps until I am able to get some volunteering/shadowing experience or go for it as is? How important are these? How advantageous is to get these apps early before the February deadline?

The idea with the EC work or general health care related experience is that you want to have credibility behind your claim that you have really thought about and are prepared to enter the field of medicine. If you have a narrative that can back up your decision to change careers and become a physician, you can be successful, but this is difficult. If you have non medically related experience but have spent some time doing service this can at least demonstrate the desire to work with and help people. With regards to applying early, it certainly helps because spots fill up as admissions is rolling for most programs, but plenty of folks get in later in the schedule. I would get started on looking for volunteering or shadowing asap so that you can at least show that this is something you are working on.
