Fulbright Conflicts With the Beginning of Medical School

I was thinking about applying to the Fulbright ETA program for a gap year before medical school. I understand that it is possible to apply to medical schools while doing such a program. However, many of the country-specific programs I am interested in end after the start of the academic year of many of my target medical schools.

Let's say I do get the Fulbright and get into a school that begins before my gap year is up. Are start and end dates negotiable? Would I have to take ANOTHER year off just because I will be late a few weeks?
 
Aren't there restrictions on traveling outside of your country? I see this making interviewing difficult.

A quick Google search for "Fulbright gap year" will return some threads of people who've done this in the past. Interviewing takes some planning and can be a pain but is absolutely doable.

My cousin recently got back from her year abroad with Fulbright. She had restrictions on how often she could travel outside the country so that's the only reason I brought it up. I believe it was only once or twice a year. Depending on which country you apply for, I see that being more than just a pain but really expensive too. I messaged her to ask about flexibility with start and end dates. She said they were really flexible. She left in October 2013 and returned August 2014. So I'm assuming you could push back that timeline and make it work. Good luck getting in.
