Cheddar doesn’t count imo. The American cheese that’s wiggly and can be put in plastic cheese, those are blasphemous and bring shame upon the good name of cheese!

And to answer your question about grilled cheeses—Muenster is my go-to.

Okay but what about the deli sliced American cheese that is actually like real cheese and is not the processed slices? White American from the deli makes some BOMB queso.

Lactose free cheese can still be real cheese it just has the lactose broken down. Like lactaid milk is real milk, just no lactose.

Yes. The milking animal comment was directed at the vegan cheese. Regardless, lactose free cheese has still been... Tampered with.

I accidentally bought lactose free cheese once. It was awful. You could say I'm still... Sour about it...

Surprised that no one has suggested cheese whiz as wolf cheese

Although, on a philly cheesesteak...let's just say i believe every cheese or cheese-flavored product has its uses.

Except for smoked gouda. That stuff is nasty.

Cheese will do that to ya. Sneaky sneaky food.

It has even managed to convince people that it's an acceptable replacement for dessert

"Oh you just consumed >5,000 calories of savory, salty, heavy, rich food? Well let's round that out with 5,000 more calories of savory, salty, heavy, rich food. Plus maybe an errant grape or two. You know, for the vitamins."

As someone who has cursed out many cheeses this summer, the enemies of my cheese making process are too much or too little salt, time, acid, an infection, not reading the recipe (or accidentally turning the page part way through), not aging long enough, grubby kid fingers, mother in laws who think bacteria is bad even when you try to tell her "but it's cultured" and on and on

Lactose free cheese or vegan cheese for sure. If it doesn't come from a milk producing animal then it isn't cheese
Non dairy cheese is the absolute worst! And somehow it gets 3 times as awful when you make something with it thinking it is just cheap cheddar. :barf::barf::barf:

No. Cheese is milk that has been infused with culture, surrounded in warmth, sometimes bathed, and then drained of excess, and shaped for success.

Well tell that to the food network people, or whatever food show I was watching about American cheese that said it was white cheddar that hadn’t been aged (or something like that).

American cheese and kraft singles are certainly not the same thing though. Good American cheese is quite nice.

The American cheese recipes I have played with either follow the same form as cheddar except for the actual cheddaring process (but so do gouda and lots of the mid texture cheeses) or they are cooked and pressed cheeses (working toward Velveeta with these). The original American cheese recipe was just a variation of brick cheese or some call it a farmer's cheese or farmer's cheddar... but again, that is a misnomer because it isn't cheddared. But it was called that because it melts and makes a good sandwich cheese. (I guess I shouldn't talk because my cheddar doesn't melt well enough to deserve the name either. I think I didn't get the pH right.)

Agreed though. A good American cheese is wonderful! Kraft cheese is basically velveeta or Amish pot cheese (which can be yummy honemade... )

The only cheese I have seen advertise lactose free is the vegan stuff... so I kinda assumed that was what you were talking about. I know some of the cultures break down lactose while making cheese, so if you read up on it, lactose intolerant people can still eat some cheese.

Yep my sister definitely can eat a lot of hard cheeses but soft cheeses are a big ol nope
And I haven’t had lactose-free cheese, but I figure it’s just like using lactaid to make cheese. SAR said it existed :shrug:

And smoked gouda is great for mac n cheese in combination with smoked cheddar

actually, velveeta or kraft singles are the first choice in getting the pampered pooches here to take their medicine...I am pretty sure Max, the chinese crested, would figure out how to fly if cheese was involved. But that is the only kind they can have. ran out of both, so used a little piece of mild cheddar...they both threw up. yuck....

Yep kraft singles are great for pills here too. We’ve switched to small pieces of pill pocket because of the sodium in the cheese and the fact that one dog is a cardiac dog
I think she prefers the cheese but supposedly the pill pockets are better for her :shrug:
