The American cheese recipes I have played with either follow the same form as cheddar except for the actual cheddaring process (but so do gouda and lots of the mid texture cheeses) or they are cooked and pressed cheeses (working toward Velveeta with these). The original American cheese recipe was just a variation of brick cheese or some call it a farmer's cheese or farmer's cheddar... but again, that is a misnomer because it isn't cheddared. But it was called that because it melts and makes a good sandwich cheese. (I guess I shouldn't talk because my cheddar doesn't melt well enough to deserve the name either. Yep kraft singles are great for pills here too. We’ve switched to small pieces of pill pocket because of the sodium in the cheese and the fact that one dog is a cardiac dogactually, velveeta or kraft singles are the first choice in getting the pampered pooches here to take their medicine...I am pretty sure Max, the chinese crested, would figure out how to fly if cheese was involved. But that is the only kind they can have. ran out of both, so used a little piece of mild cheddar...they both threw up. yuck....
