Im scared to death of telling the dept chair at my school that i want plastics. Ive been told several times not to tell general surgeons that i want plastics. Im trying to set up rotations for 4th yr and im trying to decide wether I should do 2 or 3 gen sub internships or just one sub-i and a couple of plastic rotation.

Also if anyone ventures to give me their thoughts on the following.
225 step 1 + Not AOA + 2 publications + 2 research projects + I am true hammerhead
Do i have any shot at matching straight to plastic?

I did not have AOA or publications. Your step 1 will most likely be on the lower end of the acceptance pool. This doesnt mean you cannot get in. Any students best chance is to have some form of connection. Rotating is one of the best ways to get yourself known at a program (for good or bad.) IMHO rotations in your situation will be very important. Regarding the 2-3 GS sub-i's, that seems to be a bit of overkill no matter what your situation. Are you doing that because you are trying to also impress some GS staff or there is nothing else you can do? IMHO 2-3 GS sub-i is an insane waste of time, even if hardcore GS. You will get plenty of GS in the future, concentrate the stuff you wont get but will need. IF you wanna do plastic, then maximize your plastic rotations. If you still have holes in your schedule there are several 4th yr rotations that helped me as a surgical intern..much more than a GS sub-i ever did. SICU for one, anesthesia for second, radiology for third.

Is that a good idea to attempt it with a low Step 1 score/no AOA/no clinical honors/any of the above?

I've been told that integrated plastics programs are skyrocketing in popularity to the point where their competitiveness bests that of derm programs now!

Yes, they are competitive. But what is the OP's alternative? If you really want to go plastics it's certainly worth trying. If you do a nice job on aways then a match can certainly happen. I don't have the match outcomes but this would be a touch below average but that means some do better and some do worse. Go for it but make sure you have some solid GS backups so you can look at the PRS fellowship.
