I took a lot of classes at my local state school over the summer, and the classes there are 3 credits, while the same class at my school would be 4. Does AMCAS normalize this or do those classes count less?

If both schools use the credit-hour system, then they are not normalized. If the two schools use a different system, or both use different systems from credit-hours, AMCAS will normalize them to credit hours, based upon the instructions given on the transcripts from those schools.

Is there some site that lists all the diff. systems and their conversions?

No. I attended two schools that use funny credit systems, and at both, the registrar was able to tell me what their "multiplication factor" is.
