Your math is correct; the #'s you show would give a GPA of 3.12.
 
You probably know that DO schools accept the higher of the two grades, if you take the course a second time. That could significantly raise your GPA if any of the "other" undergrad was a retake of your original work.

3.125 should be your rounded overall GPA

GPA Calculation question -
Goal: Apply to a DO program such as Pikeville, KY

GPA from original baccelaurete: 2.65 120 credits (7 years ago)
Other undergrad work from local CC: 3.95 69 credits
(CC classes consist of some core classes before graduation/some very recent IT classes)
Do you just combine the two to come up with: 3.1?

If so, good pre-med class results (~4.0) could bring me up to a 3.2 and make this a path worth a shot. (Lower end of DO acceptance - but a chance none the less.)

If the CC courses are not counted then its obvious I would be wasting my time taking pre-med classes and the MCAT. I have been successful in all my professional experiences; however, this is a path I am very serious about as I want to pursue a career with more significance.

I am very confident in my intelligence/ability to score at least average on MCAT. I also have an MBA with a 3.95 GPA which I have heard is irrelevant - maybe I can use it as part of my personal statement.

Can anyone please confirm my GPA assumptions above?
 
For osteopathic schools the overall gpa (but not undergrad) should increase because of the MBA, I believe undergrad and grad are averaged on AACOMAS for the total gpa.
Current uGPA 3.12
Current gGPA 3.95
Current Total GPA 3.25 (assuming 36cr for the MBA)

If you add in a 40 credit post bacc of sciences at a 3.9 you will have the following:
Future uGPA 3.26
Future gGPA 3.95
FutureTotal GPA 3.35 (assuming 36cr for the MBA)

With a good science gpa (hopefully you undergrad with a 2.6 was not in the sciences) and a decent MCAT you would definitely have a shot. I would definitely retake any Ds and Fs to boost the GPA further, maybe even Cs depending how serious you want to get.
