I have talked to some people that graduated at good universities with great GPA's (in the 3.6-3.8 range), and said they are going to a CC for a few quarters during their year off to take some extra bio courses, like anatomy lab or microbiology, to inflate their GPAs. Has anyone done this or known anyone who has? I would think it would be frowned upon but I don't know how someone on adcoms would view that.

Try reading this thread (=try using search function).
There are a lot of different opinions on this topic.

My 2 cents, I think it's a bad idea. I think adcoms will see right through it. Why risk looking bad when their GPA is already in the average range?
Unless they have a really good reason they want to or have to take it at the C.C rather then their own school, I would rather spend time improving my ECs.

I read the first couple pages of that thread earlier, but I think it's addressing kids who finish their pre-reqs at a CC and then go to a 4 year vs. those who go to a 4 year and then go to a CC to finish some pre reqs.

The guys I talked to have already finished all their pre reqs and have degrees in bio. They just pretty much want to go to a CC to ***** grade points to say, get from a 3.65 to a 3.75. I'd want to tell them not to, but I'm not really sure what to say. I saw one post about doing that, but I don't know if the same thing could be said for people with already decent GPAs.

There are some adcom members in here, so if you're really eager to persuade them you could probably PM them or wait for them to see this thread..🙂

But maybe you could ask them to try and be in an adcom's shoes. How they would see an applicant who's done something they're trying to do?
It just seems too trivial a thing to be hung up on (I hope they realize unless they take like 20~30 credit's worth of classes, the GPA won't really go up that much) when they could be spending their time on much more productive things that would decorate their resumes a lot better.
