When calculating science GPA, math is included correct?

How are things divided up?

Do medical schools weigh Science GPA higher than total GPA? Do they use a formula to calculate their own GPA?

MD schools yes, DO schools no. Texas (MD and DO, I think) counts math as science and counts computer science as math. Non-TX MD schools don't count computer science as math. (And non-TX DO schools don't count math as science.)
How are things divided up?
Good documentation, on which courses count as what, can be found for AMCAS at aamc.org. Also see good docs for AACOMAS for DO and TMDSAS for TX.

Varies by school and you don't necessarily get to know whether they do or not.
Do they use a formula to calculate their own GPA?
Varies by school, but pretty rare. UWash, for instance, used to weight (fresh + soph*2 + jr*3)/6 and ignore senior year, but apparently they don't any more.
