Finally posting on SDN after lurking for years...
So I'm aware of the grade replacement policy. I plan on retaking 2-3 classes after I graduate. Are these considered post-bacc or undergrad? How do I go about entering/calculating this on AACOMAS? Thank you!

Any undergrad class you take after graduating will fall under the post-bacc line of the AACOMAS. Your undergrad GPA is freshman through senior years + post bacc. So both.

You enter them just like you did for the regular classes.

What if I retake an undergrad course as a "nonmatriculating graduate student?" It's not a post bacc program but I can take undergrad courses, will this replace the previous grade?

If it's the same class then yes
