My grades are significantly lower than my mcat. What type of response should i use to explain this in my interviews. I was thinking, "I matured over the summer and studied with a goal in mind to do my best on my mcats and show my true ability."

Something else to add would be being over-involved in extracurriculars or having to work man hours...depending on your circumstances.
Where you involved in a lot of other things? That could take time away from your studying. Working many hours? Other circumstances in your family or personal life?
