Graduating, still need to take bio, no room if I want to graduate

I'm graduating with a degree in Chem E in 2013 summer. I have no room to take biology. I took a basic bio course (got B) but that was just 1 quarter. My university is now changing from quarters to semesters. I am taking Max credits in the remaining 3 semesters.
So, my plan is to take biology (I still need 2 courses, right?) the fall of 2013, after I graduate.

My plan was to apply during June(? Whenever is earliest) for medical schools. Am I allowed to do this, is it ok to meet the prerequisites courses after I graduate as long as its before my med school enrollment? I thought about pushing my graduation but they offer chem E courses basically once a year, and if I wait to take some elective courses that I still need until fall, I will get a professor that I hate(I had him before and I got a very low grade in his very subjectively graded course). I guess med schools like to look at pre req grades so maybe I should push my graduation anyways?

I am projected to have a 3.55 to 3.6 gpa( I got very sick during freshman year , I hope I can write my story when applying to medical schools) when I graduate. I got B's in all my prerequisites (except maybe bio when I take it).

Yep, as long as you have the pre-reqs done before you matriculate I think you're alright. So you are/have taken the MCAT with only one biology quarter...? How'd that work out?
 
Verbal reasoning and physical sciences....I'm set on. The biological section was my toughest when I started studying for it because I knew nothing(I just slept in that 1 quarter of bio, I didn't learn a single thing). I have not taken the official mcat but I have taken some aamcs and it looks like i am going to get high 30s or low 40s(well, guess there isn't really a "high" 40s)

I guessed my way thru organic chemistry so that didn't help. However I am glad I pulled a B in all of them in terms of gpa(and not any lower). I have been studying like hell and since I plan on taking MCAT early 2013, I hope to review everything agsin and take the remaining mcat exams.

Ever considered a one-year master's in engineering? Your school might have such a program, and it would give you time to finish bio.
