I'm planning on taking a gap year so I'll be applying for the Fall 2016 cycle because I wasn't able to fit in all my credits within the next year. I'll have about 80ish credits from my current institution by next spring. I completed 30 from my first college before I transferred out. Technically speaking, I need around 120 to graduate from my school. Would it be okay if I took my last 9-12 credits at a school nearby my home town (any preference given between private/public/community college)? I'll transfer over the credits to my current institution and graduate in the winter.
 
You can't assume that all classes taken elsewhere will successfully transfer to your primary university. I suggest that if you plan to take this route, that you meet with someone in the academic advising office and get the official blessing for each course you plan to take. Also, have a good excuse ready for why you need to be near your hometown. I'd discourage you from using CC credits to wrap up your undergrad degree. You want your transcript to show a progression of coursework difficulty, not terminal fluff.

It don't think it matters if my primary university will accept the transfer courses because they'll end up giving me transfer credits for it if the course doesn't articulate. Also, would it be okay if I pursued something that interested me such as music or business? I don't want to take some random high level biology classes for the sake of impressing the admissions committee.
 
Assuming you've completed all the requirements for graduation other than total credit hours, and the recommended/required prerequisites for med schools, it would be fine to branch out into other interests, like music, business, a foreign language, etc. for your last 9-12 credits.
