I've had a perfect GPA for 3 years but I have dangerously low levels of extracurriculars mainly because I didn't know if I wanted to go to med school after graduating or what I really wanted to do.
Right now, I'm contemplating taking a Psychology minor instead of taking easy low level courses to finish my degree requirements. Psych over other minors because I absolutely love human psychology.

Question:
Would taking the Psych minor help my malnourished med school resume in any way or should I take those lower level courses so it'd be easier to maintain the 4.0?

I don't get the logic... No EC's = Take more classes/get a minor.
You should try to go volunteer at a hospital and do some research. You really only need to dedicate like 3 hours a week/ one day a week to each to beef up your application for anything really. Later after figuring out what you want to do you might want to get some community service, shadowing, go on a medical mission, increase research hours to get publishing, etc.
Don't try to go around a red flag, take it down.

You should stop worrying about adding a minor and really start worrying about the bolded. You will not be accepted to medical school if the bolded is true. You can be accepted with or without a minor or a 4.0
 
You might have to take a year off for EC's regardless.....having just one year of EC's is probably not going to cut it even if you have a high GPA/MCAT combo.

As far as the psych minor only do it because you want to.....your major/concentration is pretty meaningless in the med admissions game so you can guess how important your minor is.

So you barely did any ECs coz you didn't know what you want to do? Isn't it why you should be involved and figure out what you wanna do with your life? Doing ECs only to put it in your resume/application will be very evident...but above all..I hope your decision to pursue medicine is based on actual interest and passion...then you won't have hard time to get yourself involved in a way to increase your ECs.

do a minor in psyc if you like it..but not to compensate for your lack of ECs which can be only made up by..well bu doing ECs you care about.
