i'm currently taking a break from school, due to many reasons.
but i want to go back to school in two years and finish my
bachelors and go to dental school.
what would be a great way to build my resume for dental school?
i'm currently working at the dental office, but they don't let me
do much (shadowing receptionist) because i have no license.
can someone please help me out?

Just shadow different dentist offices. You don't have to assist, just watch for 40 or more hours total. Volunteer as much as you can, and do well on the DAT. Also have a good reason for going to dental school in your personal essay.
