since not all acceptances will have been made by the FAFSA deadline, do you just plug in names of schools that you MIGHT attend, or can you add some in later?

after the FAFSA has been submitted, is there any provision for changing schools? (i see no point in taking up one of my six slots with a remote possiblity so have filled those with more likely options.)

The earlier you submit your FAFSA, the better. Schools don't have unlimited money to give out, and even with loans its better to submit earlier.
