How do you know which one to use?

Always go to zaitchev, however there are a few exeptions.

Hoffman rearrangement, or E2 using a big bulky base. I cant think of the others offhand, but generally a reaction favors the zaitchev.

Don't you mean markovnikov?

No he means zaitchev and hoffman.
Zaitchev is where the double bond forms in the most substituted position, while hoffman is where it forms in the least substituted position.

Oh yeah, zaitsev/hoffman is in relation to the formation of double bonds. Where as markovnikov is says the nucleophile will attach to the most substituted carbon, right?

hoffman and zaitsev you see a lot in E2 reactions and zaitsev you see a lot in E1 reactions. and yep, with markovnikov, it would definitely attach to the most substituted carbon!
