I want to send more LOR to the schools that have me on hold, but do I have to go through the committee letter service so that they are anonymous, or do I just have them sent directly?

As long as you don't receive them, then send them out, it shouldn't matter which one you do.

Oh, and don't have your recommenders write the letters anonymously. 🙂

It was a joke. Maybe you should find out what the word anonymous means.

I can write you an anonymous LoR, but it just won't be very credible...

The purpose of letters of recommendation is to have someone of sound judgment and good authority vouch for your personal qualities, and if the person reading it has no idea who wrote it, it's not worth the paper on which it's printed.

I needed to dig this up from the grave...
Should I use the email addresses for updates and then have my PI email them directly or should I go through AMCAS??

I would ask the school about that actually, specifically for post-interview updates (just call them up, they'd be glad to tell you). They might just want them directly from the letter writer/school. Otherwise yeah, AMCAS is always a safe bet
