OK, let's say that I have a pre-health committee packet, and I send it to AAMC, and they then send it to all the schools that I apply to, and this packet contains my LORs (science faculty, Doctor LOR, etc.), do I need to send any more to the school? Like for the secondary, or something? Or will the LORs that I originally sent to AAMC (which may be a pre-health packet) be enough? Thanks!

The answer would vary by school. Each school has their own requirements. If I remember correctly, at most schools a committee letter is enough. My uni doesn't have a committee letter so I had to investigate the individual letter requirements of the schools which can be quite different. Usually two science faculty, one non science faculty, and one supervisor (at work, research, or volunteer) will have you covered.

My university doesnt have a committee evaluation as well. I sent all my letters as a "letter packet"

Do I then assign the letter packet to the schools even if I have more letters than the "2 sci, 1 non sci, 1 supervisor" limit?

Usually the letter I suggested are minimums. You can submit as many as you like, but I wouldn't provide more than 1-2 more letters than what they request. I don't know how packets work, but it might be worth a call to the admissions of your schools. At the least look at their websites. Many will have these detailed requirements of who they need a letter from, OR a committee letter fulfills all your requirements.
