How do Opt schools find out about your results in classes taken after you apply?

Question.

I am applying to schools this September.

I plan to finish Microbiology and Anatomy this Spring. So clearly, they will not know about my plan to take those courses or my grades in them...

How can I inform them of this? Does it hurt my chances?

I have a feeling there is a easy solution to this.

I don't think it hurts your chances. You just give them an updated transcript after you are done. Yes its that simple.

Most schools (if not all) require you to send a transcript after you graduate (or I guess, after your last semester if you are not entering with a degree).
 
Some schools will have space in their applications to place intended pre-requisite courses which you haven't taken. You will need to update them with a transcript (contact to see if they will accept unofficial student transcript updates) when you complete them.
