How important is "consistency" in volunteering?

I am a non-trad premed who is currently working in a lab as a postbacc research fellow at NIH. I need to improve my MCAT scores especially verbal section.

But working full time til 5 or 6pm then studying several hours at library at night has not given me many hours to prepare for it compared to my previous trial spending entire summer break. So it looks like I would need to study for about 10 months instead of 3.

However, I am not quite sure whether I should incorporate extracurricular activities in my current situation. Here are the list of extracurriculars I am doing.

(1) President of a community service club at my church
- need to host meetings once every other week for an hours before mass
- need to arrange and construct community service projects once a month or two
- need to attend several meetings with presidents of other organizations within the church

(2) Hospice volunteering
- 3 hours every other week, 6 hours per month

(3) NIH Health Disparity Fellowship program
- Need to read papers regarding health disparities and discuss with national leaders in NIMHD and health disparity research field. About 5 hours per month.

(4) Occasional Shadowings

Do you think I should incorporate these activities during my postbacc years? I already have 500 hours of medical volunteering, 100 hours of shadowing, and 200 hours of nonmedical community service hours...
 
since you already have 500 hours of medical volunteering, 100 hours of shadowing, and 200 hours of nonmedical community service hours, I really think you are set. focus on the MCAT and add the ECs if you have the time
 
The whole point about shadowing is knowing what you are getting into by becoming a doctor. You have done that. Study for the MCAT and move forward.
