with most dental schools being rolling admission, do applicants have a greater chance of acceptance if they have an early interview? do you think later interviewees has the advantage because they are fresher on the admission mind. do admission actually decide who they want after the interview or do they wait until they interviews all the applicants before deciding dec 1 acceptance?

Basically as long as you're being interviewed before late November all differences in interview dates are negligible.

Now maybe the earlier dates are for those they feel are stronger candidates, but theres no evidence that is the case and it is very possible to get a pre-dec interview if you interview by mid Nov.

As far as what they actually do, I actually asked the adcom in an interview and she said they meet every Monday following the previous interview group (which only occur on Mondays) and go over their thoughts on the applicants. I'm assuming they begin to make surefire decisions on a few candidates they really like, and then the rest are in a sort of limbo, where they are continuously compared to the rest of the applicants coming later until the ideal class is formed, though that is speculation.
