As the title says, I'm taking this in the upcoming fall

Anatomy & Physiology
General Chem I
N. E Studies
Communications 1010

Total 15 credit hours

Would it look bad if I only took this? I know I'm going to be staying a litte bit longer before I apply so I'm not in a hurry however the most important reason for doing this is because I want to make sure I get an A in both those sciences

Anatomy & Physiology I hear is pretty hard and Gen Chem might be important for pharmacy 🙄. Plus I will be working too so I won't have too much free time.

Shooting for around 15 units a semester with two sciences is usually recommended, so your schedule is fine.

12 credit hours is full time so 15 is fine. It is good to mix up science and non science because you will probably do better in the science classes and you can have time to actually learn in the non science classes too.

You need some "fluff" classes in there to balance out the amount of studying you will have to do with the sciences. Depending on the curriculum at your school for A&P, the first semester may be primarily memorization of bones, muscles, organs, etc. and their placement in the body. Either way, you do want to get the best grade in all math and science classes along with the "fluff" classes because they will look at both your overall GPA as well as your math/science GPA.
