Probably very little. I just got an interview invitation, and the earliest date was in March!

by the end of November ~25% of interviews are left, by end of december ~15%, and so on. Based on my memory of planeblue's tracker, you should give it a look
Planeblue's tracker has a lot of problems with its methodology (e.g. SDN response bias, 1 cycle only) that it should be taken with a grain of salt.
That said, it's possible to get interview invites from now to March and get accepted this cycle.
Was just about to comment this. The data is helpful, but falls subject to the SDN prevalence of early applying, high (relative) stat, voluntarily reported posters.
There is no perfect way to address the OP's question with categorical accuracy other than to say that there are many incoming medical students whom only start to receive interviews after the new year and eventually matriculate. One of my classmates was even in this situation, and ended up choosing between two Top 10's in May. On the other hand, many applicants certainly don't and have to reapply. February is when most schools' cycles really start wrapping up (February invites that is, for March dates).
A lot of state schools seem to take longer- OSU sends II only for 2 weeks in advance, UMass and UConn seem to go very slow, etc. I do agree that there is some bias here that the lower stat applicants who interview later are in the new year usually and may not be on the site.
Of course, its not perfect by any means but I do think its reassuring to some when combined with anecdotes about 5 post-Christmas IIs and acceptances etc. At least I find it a bit reassuring rn haha. there are still a few to be given out!
Another thing to consider is that as people receive acceptances or more interviews, they probably get lazier and lazier with regards to posting on the forums about II's that they've received. I know if I had an acceptance in November etc. I probably wouldn't be as an engaged with the forums or likely to post about an II in January/February
Nobody really knows. But schools do start sending out mass rejection emails in February and March, so that should be an indication as to where a lot of the schools are in terms of filling up their classes.

If its any consolidation, according to umich's application tracker (M.D. Admissions) they have about 25% of their interview spots left when taking the number of IIs extended last year into account. However, the # of admission offers given is quite low compared to the # of interviews scheduled so far so its likely more than a 25% of II's will be given out in the next few months.
