How many LOE's to assign to schools?

I have 3 LOE's. Committee Rec., from Hospital where i volunteered, and Physician I shadowed.

Albany only asks for committee rec., should i only send committee rec.?
Would it have said I could send more if i was allowed to?
 
If a school asks you to do X, and you do Y, do you think the school may rightfully come to the conclusion that you either can't follow simple instructions, or feel so entitled that the rules don't apply to you?

Absolutely, and I don't want to give off that impression, so that is why I'm clarifying what I understood from the school's website, since some of them seem a bit vague.

Just wanted to double check by people: From what I understood, the following schools only accept committee rec.'s/letter packets and not any additional recommendations (physician, volunteer)?:

SUNY Downstate
SUNY Upstate
Albany
Sidney Kimmel Medical College
PENN State
PA Commonwealth College
Dartmouth
Quinnipiac
EVMS
Tulane
