How to ask LOR non-science professor from 3 years ago

I'm looking for some insight on how to write an email to a professor I know from when I was an undergrad 3 years ago. She was an advisor for one of the smaller organizations I was involved with, so I didn't even have her as professor. I haven't had a non-science class in forever because I'm doing post bac GPA repair and I'm only taking sciences and I don't think it's financially feasible for me to take a non-science class just for the sake of getting a letter. She was greatly influential in my interest in becoming a primary care provider in rural/medically underserved communities.

Anyway, she probably won't remember me but I wanted to get in touch with her. I'd be willing to meet with her or even spend this semester being a student assistant or volunteer, if possible since I still live in the same college town.

Should I ask her in an email if she has any opportunities for me and leave out that I need a letter? Or should I be forward and include that I want a letter in the future? I don't wanna seem like a brown-noser or that I'm only wanting to volunteer just for the sake of a letter.
 
What school requires a non-science LOR? If one does, I doubt a letter from someone that happens to teach a class you never took would count.

Most schools require a non science letter. However, for LoR purposes they should be from professors who taught you in a classroom setting

Instead of email just try to see her in person. It's hard to ignore someone right in front of you

I suggest not doing this because you could catch her at a bad time. Email first, asking to speak with her personally about a possible letter of recommendation. Hopefully the meeting should help her jog her memory of you.
 
Email to meet. Bring cv and statement of purpose for exactly what you want. Talk about it and give papers to prof. Talk about topics you liked/remember from course. Then email following up with all info on where to send letter.
