How to represent community college experience in AMCAS?

When I was in HS I took community college courses that did not count toward HS graduation and ended up earning an associate degree before HS graduation. This will be reported on AMCAS of course and shown on my transcripts. At the community college I was in an honorary and we did several health related things including organizing a health fair. To what extent should I incorporate these things into my application, if at all, since they are kindof HS-era activities, although health related. Should I get a recommendation letter from a Prof./advisor from my time there? I have 5 letters from my University already.

It is something of a gray zone, but I'd keep anything strictly from your dual-enrollment off the app unless you have to include it, like those transcripts. Those are still high school-era activities and letters. The exception is if the activies were continued after high school.

Additionally, you should've done even cooler things in college anyway. You could always talk about those.
 
If you are applying after only 2 years of university (having arrived at the university with a AA or AS degree), then I think it is only fair to include the activities you engaged in during your first two years of (community) college. After all, everyone else will be including the activities they engaged in during college; you should, too.

The degree was earned before HS graduation and while I did use the credit earned against many introductory classes I am still graduating from University in 4 years.

That makes me less inclined to recommend that you include the activities you engaged in before HS graduation. (Your HS and year of graduation is listed on the AMCAS.)
