How/when do schools categorize LORs?

Ok So I have 8 LORs added in my AMCAS. By this week I expect to receive 7 of them.

Now, I have assigned about 5 per school and the one missing is part of them all.

The question is will schools have access to the 4 that are available as of now? Or will they get all 5 when the one missing is received by AMCAS?

If they do get 4 for now, and since most require 3, will they mark my application complete? The last LOR not yet received is from Science prof so it is sort of required. But will schools care to check if it is the science one they haven't received yet?

Lots of questions but I need to clarify this. Thanks!

Don't mean to hijack your thread, but my main composite letter has not been received, which I'm hoping counts as one science for most schools, and then I have my packet of letters that includes 1 science, 1 non-science, and research letters, . I'm hesitant to check the letters off on AMCAS yet because I want them to receive all letters together because my composite is one of my strongest. Should i just indicate whats going to be sent? Will they wait till they get all the letters or what?

Ok so I called up one uni (GWU), they said AMCAS waits until ALL the assigned letters are received and then sends them all at once.

I think the smarter option would be to first assign the letters AMCAS DOES have. As it turns out, you can assign additional letters however you cannot delete current letters temporarily (the only option is to mark them "will not be sent").
 
Ok So SUNY requires a letter from Grad Advisor.

And I don't have it yet added on AMCAS.

So I sent whatever letters I had and apparently I am marked complete.

Should I bother to tell them to hold my application until the letter from the advisor arrives or will they ask me if they need it?
