How/where to discuss weird time off after graduation?

This doesn't address the "how," but many secondaries include a space to discuss what you've been doing since graduation, so you could explain it there, or alternatively in the "anything else?" question that many schools will ask.

I’m not sure that I’ll want to use the what I’ve been doing since graduation question to explain this since I think it will be better for me to highlight my meaningful employment, volunteering, etc that I’ve participated in since this gap!

This is what I would do. I don't really think you need to address your gap - you have a good answer if it were to come up in an interview. Just wanted to let you know there is a spot to address it if you had felt it truly necessary to do so.
 
Great, thanks everyone! I feel better now. Seems like consensus is to wait until interviews to address it.
