They're at really good schools and I don't really want to "practice" interviewing with them. I don't know what to do about scheduling them. How far ahead should I schedule them?

Not sure exactly what you mean by "practice" with them, but I'm going to go ahead and assume you mean you don't want any of them to be your first experience. If that's the case, you're going to have to dive in at some point; go over common questions that adcoms tend to ask until you feel comfortable answering those questions without digressing or rambling.
 
You can also try mock interviews beforehand, if you're that nervous.

As someone said before you should just dive in. especially if the school has rolling admissions if it is non-rolling then you can afford to put the interview off a bit.

Yeah, schedule them ASAP; the earlier the better for rolling schools. Try and do a mock interview before hand to practice; other than that, you're never going to feel like you're "ready" so you might as well just jump in that way at least you'll still be early and competing for more possible acceptances.
 
Hmm...What are some good ways to prepare if you are (far) away from your said undergraduate institution?
 
I know everyone is afraid of their "first time." If you don't want them to be your first, you can always buy a prostitute to break you in.

But seriously, I had my first interview this month, and I think it went great. I had my second one, and it didn't feel any better. You may want to start with a school that has a more laid back reputation.
 
It helps if you videotape yourself answering questions your friend asks you. That way, you can see how you come off to others and review how you present yourself, your flow of speech, etc.

I scheduled a mock interview before my first interview. I did horribly, and it really helped me out in the real thing.

My first 2 interviews were at extreme top choices and so are 3 of out of my first 5 interviews. At some point, get over it, be yourself and realize that really good schools want you. Don't worry about practicing.
