You're talking about on plastic teeth right? Main thing is to use a small and sharp bur that you can make clean cuts with, which reduced the need for refining. For this I love the 34 bur, which is a small wedge shape, or the 330. For plastic teeth, most instructors will not even be able to tell the difference between 1.5 and 2mm, after all, you're talking about depth on a curved surface. I wouldn't worry too much, just be sure you're at least 1.5, and they won't be able to say you're too shallow.
For real teeth, throw all those rules and guidelines out the window, they don't really apply anymore. Get the caries out where ever it leads you, and fill it! 😉
