would it be a big difference if I pushed it to being released september 21? If I choose the aug 31st release date that means I would be rushing to study for the mcat but pushing it to sept 21 would give me enough time to complete SD2ed's schedule sufficiently. Will I be too late in the process...

You would be right in the middle of the pack as far as applying. It I were you, I'd choose the later date. That would give you enough time to prepare for the MCAT.

Get your primary application in as early as possible. You will have toe option of stating when you will take the MCAT, and the schools you apply to will be able to look over your primary. I knew people who were offered interviews before they took the MCAT, and a decision was made only after their scores were submitted (I don't know if schools still do this, but this happened only a few years ago). Getting your primary application in early is key, so delaying the MCAT for one month will not hurt you (and may allow you to do better).
