Will they give an applicant any edge in admissions? Not asking if they compensate for deficiencies, but rather would meeting people there, talking about it in an interview, or even simply having the school know that you went be beneficial enough to warrant the time and money that it takes to attend?

Maybe just maybe you would meet one of the people who ends up interviewing you and then you end up slightly more comfortable during the actual interview. That's about it.
 
It may give you extra information to talk about. But they are more for you to gauge your own interest in the program.
 
No edge in 99% of cases. Would be a good talking point to show your longitudinal interest in interviews. Exception: MSTP's, especially mid tiers. Small enough that those things matter.
