I am using Interfolio for LORs and they notified that one of my letter writers did not include a signature in the closing. It is on official letterhead. Should I contact the writer for an edited version? I do not want to bug them with something so small, but I know it is important for Committees to ensure legitimacy.

I think you're safe. I see quite a few LORs sans letterhead OR signature.
 
I agree with my learned colleague. That said, I also get a lot of bitching from some of the faculty about the lack of signatures on the letters. I'd suggest a brief email to the writer stating that a signed letter is required and you'd greatly appreciate if he could sign, scan and send, or affix an electronic signature to the document. I suspect that many "old school" writers just don't know how to do things electronically.
