Interview Q. Biggest adjustment for med school?

Was asked this at an interview recently. Basically what is a challenge as a med student you’ll face or how will you have to adjust. How would you answer this? Could you simply say the amount of information you will have to learn or is this a bad answer?

That's fine. But I'd immediately follow it up with the biggest non-academic adjustment.

So basically, how will the huge burden of medical school affect the rest of your life?

Learning information in medical school = trying to drink out of a fire hydrant.

It's difficult, but doable.
That interview Q probably wants to see if you have time management skills, can balance academic life with being a well-adjusted person (having stress-relieving hobbies/activities), and a sense of self to decide when you need a break. All med students are overachieving, type A students in some vein, so the issue most people face isn't with being motivated to learn -- it's with keeping up with the pace of learning that is required of you.
